Where the two traditions conflict

Western cooking leans on the oven and sustained moderate heat. Thai cooking leans on high, fast heat, heavy prep and far more washing of fresh produce. A kitchen optimised for one is usually mediocre at the other.

The practical compromise

Induction plus a single high-output gas burner covers both without a second kitchen. Add a decent oven rather than a large one, and spend the saved budget on extraction and prep space instead.

The practical compromise

Storage for two pantries

Fish sauce, pastes, rice and noodles sit alongside flour, tinned goods and baking equipment. Plan a larder with genuinely flexible internal heights, since the two traditions store very differently shaped things.

Managing aroma in a shared home

Where one person cooks Thai daily and another does not, extraction and some separation stop that becoming a household friction. A pocket door or a covered outdoor burner often resolves it entirely.

Induction plus one gas burner

That single combination covers both cooking traditions without building a second kitchen.

“Most expat kitchens are two kitchens pretending to be one. Plan for both and the pretence works.”
